Bowl Of The Wife Of Kit Carson

1 qt Chicken stock/broth
2 c Chicken, precooked & chopped coarsely
1 1/2 c Cooked rice
16 oz Can of garbanzo beans, drained
2 x Chipotles en adobado, rinsed, seeded & chopped
Pinch of oregano
2 c Monterey Jack cheese, cubed 1/2"x1/2"
2 x Avocados, peeled & cubed

Combine stock, chicken, rice, beans, and peppers in a large saucepan over medium heat. Bring to a simmer, stirring occasionally. Add oregano. Equally divide cheese and avocado among the bowls and ladle small amounts of soup into each bowl. There should be more solids than soup in each. Serve immediately.
