Salsa

16 lb Tomatoes: chopped
3 lb Anaheim chilies:roasted, peeled, chopped
6 c Onions: chopped
6 Garlic cloves: chopped
4 Jalapeno chilies: chopped
1/2 c Lemon juice
1/2 c Vinegar, white
4 ts Oregano
2 tb Salt
3 tb Lime juice
6 tb Coriander, ground
2 tb Cumin

Cook until thick and pack into sterile jars and process 45 minutes in boiling water bath.
